If you trash a green or red herb in any other method other than its text (Omnious Battle for example), you would still get George Hamilton's effect as it is triggered on trashing of the respective herb irregardless of how it is trashed.

However trashing it via other means such as Omnious will not give you the herb effect (Heal 20 damage for green for example) as you are required to play the card for that effect to be processed.

Wrong, you ONLY get the effect from Hamilton when you trash it via George's ability and then you ONLY get the effect stated by George Hamilton and not the healing. What you describe is the case with CLAIRE and her herb abilities.
