Who is Tobi, really?

I thought that was her first name. Still she could still be a relative of the uchiha. Has it been proven that all uchiha members have the sharingan? Nope never been proven. It doesnt show her use sharingan but at the same time its tobi He isnt one to fight fair.

Yeah, for some reason doesn't have the Sharingan. Maybe she married in though. Still, one of your major pieces of evidence you have going for you, the Tobi (トビ) in Sarutobi (猿飛), doesn't really hold up at all since "Sarutobi" is spelled in kanji, not katakana. As a result the "Tobi" in both names represent different senses in Japanese. The Tobi (トビ) is Obito (オビト) theory holds more water in this regard. Too bad Obito is a generation too young to be fighting Minato at Naruto's infancy. Also, be careful to not fall into this.

Knowing tobi its very possible that's not his whole name though. Did tobirama senju have kids? Just a random half baked theory! considering tobi has senju DNA its possible

Again, Tobirama (扉間), 扉 = Tobira = "Door/Opening". Not really comparable to katakana "Tobi". Still, the idea is interesting nonetheless since the Second was apparently skilled at space-time ninjutsu and his progeny is unknown.

What I'm really trying to wrap my head around is why Madara knew Edo Tensei when Tobirama was supposedly the one to create it. Either a) Tobirama attempted to use Edo Tensei against Madara and Madara copied it Kakashi-style, or b) Tobirama learned Edo Tensei from Madara. Since they're both in the same generation both scenarios are possible. The implications are massive if Madara gave Edo Tensei to Tobirama.

K another half baked theory. Obito is far to young to fight the fourth indeed but how about his father? Like you said obito is closer to tobi. What i was getting at is what if tobi has a mother who was an uchiha and a grandfather who is senju there for fitting the two requirements to be a sage of six paths. Obitos sharingan is similar to what tobis does. Also he would have a motive for assisting itachi in the massacre. Not being recognized as an uchiha when he is half senju seems like a good enough motive to me. Like I said though they are half baked.

Whatever Tobi's actual identity is, he has the mind of the original Madara and a Zetsu-type body as can be seen when the 4th hits him with Rasengan and his hand falls off. It's most likely some kind of Zetsu clone under genjutsu, or an old Uchiha under Madara's genjutsu, mixed with Hashirama cells. He knows far too much of things that only Madara could have known to be a separate person.
